Understand the process

Here autolyse means resting flour and water before adding starter and salt. Adding ferment changes the comparison because fermentation may begin. Write down exactly what is in the bowl.

Useful duration depends on flour and temperature. A longer rest does not guarantee strength or volume. Highly enzymatic flour or rye-rich blends need a different approach from bread wheat.

Step by step

  1. Choose a mainly wheat bread and weigh every ingredient.
  2. Reserve water only if it belongs to the final formula.
  3. Mix flour and water without dry pockets; cover.
  4. Record time and temperature; observe flexibility before adding salt and starter.
  5. Compare required work and behaviour through shaping.
